3 Ingredient Peanut Butter Cookies

    Easy peasy peanut butter cookies! Great to make with the kids or for a little treat. These really are just three ingredients, and they are gluten free!

    Makes: 10 to 15 cookies

    • 260g chunky peanut butter (or smooth)
    • 200g sugar
    • 1 egg
    • 1 teaspoon vanilla extract (optional)

    1. Preheat oven to 250 degrees C. Line a baking tray with baking paper.
    2. Add all ingredients to a bowl. Mix until well combined.
    3. Roll dough into 2.5cm balls then place on your baking tray 5cm apart. Use a fork to make a crisscross pattern (#) and flatten them out a little bit.
    4. Pop them in the oven for 10 to 15 minutes to cook.

    I lost the first batch. 250C is way too high for the oven temp. & they burnt in about 4 minutes. Tried again & cooked the second batch at 180C for 10 minutes. OK but a bit too sweet for me. Would reduce the sugar if I make again.  -  11 May 2014  (Review from Allrecipes UK & Ireland)
