Gluten free bread made with just 3 ingredients - eggs, ricotta cheese and baking powder. If you have any leftover, you can toast them the next day.


Makes: 4 cloud breads

  • 2 tablespoons ricotta cheese
  • 2 eggs, separated
  • 1/4 teaspoon baking powder

  1. Preheat oven to 150 degrees C. Line a baking tray with baking paper.
  2. Mix ricotta and egg yolks together until smooth.
  3. Place egg whites and baking powder in a glass, metal or ceramic bowl then beat together until stiff peaks form.
  4. Fold ricotta and egg yolk mixture gently into egg whites until just combined and light yellow in colour.
  5. Spoon the batter onto the prepared baking tray in mounds about 10cm in diameter, flattening peaks with the back of the spoon.
  6. Bake in the preheated oven until golden brown, 17 to 20 minutes.
