Ricotta Cloud Bread

    Gluten free bread made with just 3 ingredients - eggs, ricotta cheese and baking powder. If you have any leftover, you can toast them the next day.

    Ingredients
    Makes: 4 cloud breads

    • 2 tablespoons ricotta cheese
    • 2 eggs, separated
    • 1/4 teaspoon baking powder

    Directions
    Preparation:10min  ›  Cook:17min  ›  Ready in:27min 

    1. Preheat oven to 150 degrees C. Line a baking tray with baking paper.
    2. Mix ricotta and egg yolks together until smooth.
    3. Place egg whites and baking powder in a glass, metal or ceramic bowl then beat together until stiff peaks form.
    4. Fold ricotta and egg yolk mixture gently into egg whites until just combined and light yellow in colour.
    5. Spoon the batter onto the prepared baking tray in mounds about 10cm in diameter, flattening peaks with the back of the spoon.
    6. Bake in the preheated oven until golden brown, 17 to 20 minutes.

    What a great use of my ricotta after I made a lasagna. This recipe yielded me 8 clouds but I could have gone for 6 or even 10. I sprinkled some rosemary on my clouds before I baked them and they tasted better than regular cloud bread.     Easy recipe and very low fat. Really surprised how light it was. I used as a burger bun, didn't miss the real bun at all. What an alternative gluten free, high protein, versatile cloud bread. The only thing is I overlooked it slightly, I think cooking time for me should've been 15min. I used Splenda as sugar too.  -  22 Feb 2017  (Review from Allrecipes UK & Ireland)
