What a great use of my ricotta after I made a lasagna. This recipe yielded me 8 clouds but I could have gone for 6 or even 10. I sprinkled some rosemary on my clouds before I baked them and they tasted better than regular cloud bread. Easy recipe and very low fat. Really surprised how light it was. I used as a burger bun, didn't miss the real bun at all. What an alternative gluten free, high protein, versatile cloud bread.
