All hail the Gluten Free Goddess! This gluten free bread for the bread machine is a variation on her recipe. I had trouble getting that to rise in my Panasonic SD-255 bread machine so I went at it like a bull at a gate until I had it working, and now it makes a loaf that rivals a lot of wheat-based ones for flavour and texture.


Makes: 1 gluten free loaf

  • 3 eggs, beaten with 4 tablespoons water until frothy
  • 3 tablespoons vegetable oil
  • 2 tablespoons sugar
  • 1 tablespoon agave nectar
  • 1/2 teaspoon rice vinegar
  • 300ml warm water
  • 200g sorghum flour
  • 125g tapioca starch
  • 100g millet flour
  • 80g brown rice flour
  • 65g potato starch
  • 3 teaspoons xanthan gum
  • 1 1/4 teaspoons salt
  • 2 1/4 teaspoons dried active yeast

  1. Mix the sugar and eggs in with all the liquid ingredients. Place in the bread maker, put all the mixed dry ingredients in next, then finally add the yeast.
  2. Put the 2 hour gluten free cycle on the bread maker.
