Gluten Free Victoria Sponge

A simple recipe that is pretty much undetectable as gluten free. Try it see if any one realises. It rises better than the normal cake too.


Serves: 8 

  • 150g brown rice flour
  • 150g margarine, or similar
  • 150g caster sugar
  • 1 tablespoon gluten free baking powder
  • 2 tablespoons milk
  • 3 eggs
  • a few drops vanilla extract

Preparation:10min  ›  Cook:25min  ›  Ready in:35min 

  1. Preheat the oven to 190 degrees C. Grease and line 2 (18cm) sandwich pans.
  2. Put all ingredients into a bowl and whisk with an electric whisk for 2 minutes. Divide the mix between the two tins.
  3. Bake for 25 minutes.
  4. Turn out onto a wire rack to cool. To serve, sandwich together with jam and/or buttercream.
