This scrumptious gluten free cake is a family favourite. Simply add gluten free chocolate chips to the mix and dust with icing sugar to this delicious moist cake.
Preheat oven to 170 degrees C. Lightly grease and flour a medium size ring tin. Set aside.
In a medium bowl, mix together flour, xanthan gum and almond flour.
In a separate bowl, combine sugar, butter, salt, gluten free baking powder and vanilla extract and whisk together with an electric mixer until smooth and fluffly.
Beat eggs, one at a time, mixing well after each addition. Stir milk gently, alternating with flour mix. Making sure all ingredients are well mixed, then beat for 1 minute.
Coat gluten free chocolate chips with 1 tablespoon of gluten free flour. Add to cake batter and mix with a wooden spoon.
Pour batter into prepared tin and bake in the preheated oven for 50 to 60 minutes.
Remove from oven, and let cool in tin for 10 minutes before turning it out over a wire rack to cool completely.
