Easy Gluten Free Bundt Cake

This moist and flavourful bundt cake has a fabulous texture, perfect for a simple and yet delightful afternoon tea. It will change the way you think about gluten free baking.


Makes: 1 medium sized bundt cake

  • 240g gluten free all purpose flour
  • 1 teaspoon xanthan gum
  • 140g almond flour
  • 300g caster sugar
  • 115g butter, softened
  • 1 teaspoon salt
  • 2 teaspoons gluten free baking powder
  • 2 teaspoons vanilla extract
  • 4 eggs
  • 160ml milk
  • 2 tablespoons icing sugar, for dusting

  1. Preheat oven to 170 degrees C. Lightly grease and flour a medium size Bundt tin. Set aside.
  2. In a medium bowl, mix together flour, xanthan gum and almond flour.
  3. In a separate bowl, combine sugar, butter, salt, gluten free baking powder and vanilla extract and whisk together with an electric mixer until smooth and fluffly.
  4. Beat eggs, one at a time, mixing well after each addition. Stir milk gently, alternating with flour mix. Making sure all ingredients are well mixed, and then beat for around 2 minutes.
  5. Pour batter into prepared tin and bake in the preheated oven for 50 to 60 minutes.
  6. Remove from oven, and let cool in tin for 10 minutes before turning it out over a wire rack to cool completely.
  7. Once cooled, dust with icing sugar.

This is an excellent recipe. The cake comes together easily, bakes exactly as stated, and is moist and delicious - not crumbly and dry. I used a GF flour mix of brown and white rice flours plus potato and tapioca starch. I added one tablespoon of pumpkin spice to the batter. Thank you for the recipe! - 29 Sep 2016
