Gluten Free Amaretti Biscuits

These traditional Italian delights are made with ground almonds and almond extract, which are both absolutely gluten free. They are lovely and crunchy on the outside and crispy inside. A perfect biscuit to have with coffee.


Makes: 40 small amaretti

  • 165g ground almonds
  • 150g caster sugar
  • 2 egg whites
  • 1 teaspoon almond extract

Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

  1. Preheat oven to 150 degrees C. Line baking trays with baking paper.
  2. Combine ground almonds and caster sugar in a bowl. Add egg whites and almond extract then mix well until a soft dough forms.
  3. Using a piping bag with a large round nozzle, pipe dots of the mixture onto prepared baking trays, about 2cm apart.
  4. Bake in the preheated oven for 10 minutes, or until golden. Allow them to cool completely on the tray before removing. Store in an airtight container in a dry place.
