Easy Gluten Free Scones

    A very simple recipe for sweet gluten free scones. You can add dried fruit, chopped apple or blueberries if you want to flavour them.

    Makes: 8 medium scones

    • 250g gluten free flour
    • 1 teaspoon gluten free baking powder
    • 1 teaspoon xanthan gum
    • 1 egg
    • 4 tablespoons honey
    • 4 tablespoons vegetable oil
    • 1 teaspoon vanilla extract
    • 60ml water

    1. Preheat oven to 200 degrees C. Line a baking tray with baking paper. Set aside.
    2. Place gluten free flour, baking powder and xanthan gum in a bowl then mix well.
    3. In a separate bowl, combine egg with honey, vegetable oil, vanilla extract and water. Add to flour mixture and stir well to form a dough.
    4. Sprinkle gluten free flour over a clean work surface and flour your hands. Divide and roll scone dough into 8 balls. Place scones on baking tray and press down to flatten slightly.
    5. Bake in preheated oven for 10 minutes or until golden brown. Remove from oven, let sit for 2 minutes before transferring to a wire rack to cool completely.

    Xanthan gum is bad for the good bacteria in your gut. We need more recipes without gums. There are gum free nut milks now (Rude Health for example) but many of the gluten free products in supermarkets still have xantham gum, so it's good to bake our own without gums. http://reclaimingvitality.com/microbiome/  -  20 May 2018  (Review from Allrecipes UK & Ireland)
