1 cup of cinnamon honey yogurt, i use five: am organic yogurt
1 egg (800g ) size
90 grams of melted butter
1 teaspoon of natural lemon essence or 2 tablespoon of lemon juice
1/4 teaspoon of salt, i use hymalain salt
1tablespoon of lemon zest
1 tablespoon of honey

Turn oven on to 180 degrees fan force
Sieve flour, salt, bi- carb of soda and baking powder together with a wooden spoon, then mix in castor sugar.
Whisk egg, yogurt, melted butter, lemon juice or lemon essence, honey and lemon zest together.
Then pour liquid ingredients into the dry ingredients and fold. Slowly add the buttermilk a tablespoon at a time until your mix is of a moist dough like consistency ( roughly around 4 - 6 tablespoons ).
Place 12 cupcake papers into a pattie pan, and spoon ingredients into each of the cupcake holes, i use a ice cream scoop to do this so they turn out roughly the same size. Sprinkle cinnamon sugar on top and bake for 20 - 25 minutes
Leave in pan for 5 minutes then take them out and cool on a cake rack..
You can eat these warm with cream or as is..Enjoy!! I hope you like them
