One Pan Mexican Sausage Hot Pot

Lightly spiced no fuss one pan dinner on a budget


  • 8 thin pork or chicken sausages
  • 8 shortcut bacon rashers
  • 800 gram condensed spicy tomato soup
  • 420 g can cannellini beans drained
  • 2 cups frozen peas & corn
  • 1tb white pepper
  • 2tbs ground cumin
  • 1tbsp mild or smoked paprika
  • 3 tbs cooking cream
  • 1 pk corn chips of choice
  • 1tbs olive oil


  1. Bring sausages to the boil in unsalted water
  2. Remove skin & cut sausages into thirds ( 3cm pieces)
  3. Dice bacon & fry with the olive oil in a saucepan until aromas release ( do not crisp)
  4. In a 2 litre jug, combine soup, cumin, paprika & pepper & mix well
  5. Add the sausages to the pan of bacon, add the soup mix & frozen vegetables anf bring to the boil
  6. Reduce heat, add beans & cream & cook on a gentle simmer until sauce starts to reduce and thicken
  7. Serve in bowls & adorn wirh corn chips


The corn chips have a dual purpose in that they are an accompaniment, but also serve as handy little scoops
