Comforting spicy chicken and rice

    This is a family favourite at our house, especially during the colder months. It's quick, comforting and delicious.

    • 2 X chicken breasts diced
    • 2 X 250g packets of microwave brown rice
    • 2 X 400g cans of chickpeas drained and rinsed
    • 1/2 jar of korma paste
    • 1 tbsp of tomato paste
    • 1 1/2 cups of chicken stock
    • 100g spinach
    • Olive oil


    1. In a large frying pan fry the chicken until sealed.
    2. Remove the chicken from the pan and heat the korma paste until fragrant.
    3. Return the chicken to the pan and stir to coat with the paste.
    4. Add the rest of the ingredients apart from the spinach, stirring thoroughly.
    5. Bring to the boil and then reduce the heat and simmer until the liquid has been absorbed by the rice and the rice is tender.
    6. Stir through the spinach until wilted. Serve with pappadams and enjoy.
