Sweet Oaty Biscuits

    I always made these simple biscuits when my kids were small and we lived in London. We called them Melting Moments there but I think in Australia that is a different type of biscuit!

    Makes: 25 biscuits

    • 225g soft margarine
    • 170g sugar
    • 1 egg
    • 1 teaspoon vanilla essence
    • 280g self raising flour
    • pinch salt
    • porridge oats, to coat

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Beat the margarine and sugar, then add egg and vanilla essence mix well.
    2. Sieve in flour and salt, start mixing with a spoon.
    3. Continue mixing with your hands until mixture comes together.
    4. Form into small 2cm balls (not too big), then roll in oats.
    5. Space well apart on lightly greased baking tray, flatten out slightly.
    6. Cook at 180 degrees C, for about 15 minutes or until light golden brown.
    7. Cool on wire baking tray.


    If your kitchen is warm, the mixture may be looser due to the margarine being softer, so don't flatten out or they will spread too much.
