Sugo di Pomodoro (Italian Tomato Sauce)

    Simply authentic Italian tomato sauce flavoured with extra virgin olive oil, garlic and basil. Toss with your favourite pasta or use for pizza, gnocchi and more.

    Serves: 4 

    • 2 tablespoons extra virgin olive oil
    • 1 onion or 2 shallots, finely diced
    • 4 cloves garlic, halved or finely diced
    • 800g passata
    • fresh basil leaves
    • salt, to taste

    1. Heat oil in a saucepan or casserole over low heat. Add onion and garlic then cook and stir until translucent.
    2. Pour in passata and add basil and salt. Cover and simmer for 20 minutes over medium heat, stirring occasionally.
    3. If you've left the garlic cloves halved, remove garlic before serving. Add more basil just before serving, if liked.
