Soujouk Beef Sausages (Sujuk)

    Sujuk is a various blend of spices mixed in with beef that is typically placed inside an intestine casing that has been washed with salt. Sujuk is full of flavor and can be shaped into links like I have made, patties, or maybe even for a burger! ***Note: this tastes amazing with some over-easy cooked eggs with the runny yolks. Yummmm!!!

    Makes: 6 links of sausage

    • 500g ground beef (85% lean/15% fat)
    • 1 1/4 teaspoons ground corriander
    • 1 teaspoon ground allspice
    • 3/4 teaspoon ground cumin
    • 3/4 teaspoon garlic powder
    • 1 clove garlic, smashed
    • 1 teaspoon salt
    • 1 teaspoon chilli powder
    • 1/4 teaspoon cayanne pepper
    • 1 tablespoon at a time of extra virgin olive oil as needed in the pan

    1. In a large bowl, thoroughly mix ground beef and all seasonings together. With food approved disposable gloves, mix by hand for no less than 1 minute.
    2. Using a quarter cup measuring cup, measure out portions seasoned beef.
    3. Roll each portion into a link shape about the length of a teaspoon's handle, and 2cm in diameter.
    4. In a large cast iron or non-stick frypan, heat 1 tablespoon of olive oil on medium-high heat until hot. You may test heat of olive oil by a dropping a few drops of water in the oil-if it makes a sizzle noise, you're good to go.
    5. Place 3 - 4 links in the pan at a time. Every minute or so, using tongs, rotate the links to achieve a uniform doneness on the outside. Cook for 6-10 minutes, or until internal temperature reaches 73 degrees C.
