For Italian Carnival or a birthday party, these fritters are fun and delicious: a simple dough colored and cut out in the shape of streamers and confetti. A secure hit with kids and adults alike.

300g plain flour
1 lemon, zested
30g butter, soften
60g caster sugar
2 tablespoons grappa or other liquor
your favourite food coloring
vegetable oil, for deep frying

In a bowl place flour, egg, lemon zest, butter, sugar and grappa. Mix with a spatula, then knead with your hands to make a smooth and soft dough.
Wrap in plastic wrap and refrigerate for 30 minutes.
Divide the dough in 4 pieces and add to each piece a drop or 2 of different food coloring. I used red and green. Knead well to spread the coloring all over the dough and add as much as you need to reach the shade you like.
Roll out each piece of dough with a rolling pin or a pasta machine to get a thin (2-3mm) sheet. If using the pasta machine pass through the second to last setting.
Cut out 2 sheets of dough in strips, making the streamers. Cut the remaining 2 in small disks, to make the confetti.
Deep fry a few at the time in abundant oil then drain on paper towel and serve.
