Baked Zucchini Slices with Cheesy Breadcrumbs

    Serve these slices of crispy, cheesy zucchini as a starter or side dish. Add black olives and/or chopped mint to the breadcrumb mixture if you like.

    • 4 zucchini (about 100g)
    • 100g breadcrumbs
    • 50g freshly grated Parmesan cheese
    • salt and pepper, to taste
    • 1 tablespoon capers, chopped
    • and extra virgin olive oil, as needed

    1. Preheat the oven to 200 degrees C.
    2. Slice the zucchini into 3 equal pieces. Slice each piece in half. Use a knife or teaspoon to carve out the middle part of the zucchini to create a hollow section for the filling.
    3. Mix breadcrumbs, grated Parmesan, salt, pepper, capers and a little olive oil in a bowl.
    4. Brush a baking dish with a little olive oil. Arrange the zucchini slices, cut side up, in an even layer in the baking dish then season with salt. Spoon the breadcrumb mixture into the hollow area you made on each zucchini. Drizzle olive oil on top.
    5. Bake in the preheated oven for 15 minutes or until golden brown on top. Serve.
