The most traditional food of Easter is not to be forgotten, even if you are eating clean. This hot cross bun contains absolutely no refined grains or sugars, is dairy-free, rich in antioxidant and anti-inflammatory spices and packed with delicious flavour. No sugar crashes or energy slumps with these, and no guilt either so what are you waiting for, try em!

Makes: 8 Hot Cross Buns

  • Hot Cross Buns
  • 1/2 cup almond flour
  • 30g psyllium husks
  • 1 teaspoon baking powder
  • 2 tablespoons granulated stevia / xylitol / coconut sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon mixed spice
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 4 eggs
  • 1 cup boiling water
  • 1/4 cup raisins, coated in almond flour
  • 1/4 cup cacao nibs, coated in almond flour
  • Icing
  • Stevia or erythritol icing mix
  • 1 teaspoon vanilla extract
  • enough water to make a smooth paste

  1. Hot Cross Buns: Preheat Oven to 180 degrees C.
  2. Mix all the dry ingredients in a mixing bowl then add the eggs and mix using a whisk.
  3. Add the boiling water and mix until evenly combined to form hot cross bun dough.
  4. Roll dough into 8 equal balls and place on a baking tray. Oven bake in the preheated oven for 20-30 minutes until golden on the outside and cooked in the centre.
  5. Icing: Combine stevia icing mix with vanilla and water to form a smooth paste
  6. To Serve: Mark each hot cross bun with a cross using the stevia icing mix.
