Mandarin Orange Couscous

    A quick and easy side dish, this that's sure to impress, this mandarin orange couscous is a refreshing change to plain couscous.

    Serves: 4 

    • 1 (280g) box uncooked plain couscous
    • 1 (300g) tin mandarin oranges, drained and liquid reserved
    • 1/4 cup pine nuts, lightly toasted

    Preparation:5min  ›  Cook:15min  ›  Ready in:20min 

    1. Prepare the couscous according to package directions using the drained mandarin orange liquid as part of the specified amount of water. Fluff the couscous, and gently stir in the pine nuts and mandarin oranges. Serve hot.

    When I first made this recipe, I thought the taste of the mandarin orange was too overwelming. However, when I heated up the left-overs the next day, I added some basil and it seemed to balance out the citrus taste.  -  20 May 2008  (Review from Allrecipes USA and Canada)
