Buttermilk Doughnuts

    Cake-like buttermilk doughnuts are fried and topped with an optional vanilla sugar glaze. Decorate with nuts or candy sprinkles, if desired.

    Ingredients
    Serves: 36 

    • 2 cups vegetable oil for frying
    • Doughnut
    • 2 cups buttermilk
    • 1 cup white sugar
    • 2 large eggs, beaten
    • 5 cups sifted plain flour
    • 2 teaspoons baking soda
    • 1 teaspoon baking powder
    • 1 teaspoon salt
    • 1 teaspoon ground nutmeg
    • 1/4 teaspoon ground cinnamon
    • 1/2 cup melted butter
    • Glaze
    • 3 cups icing sugar
    • 1 tablespoon margarine, softened (optional)
    • 1/2 teaspoon vanilla extract
    • 2 tablespoons milk, or as needed

    1. Heat oil in a deep-fryer or large saucepan to 190 degrees C.
    2. Doughnut: Whisk buttermilk, white sugar and eggs together in a bowl. Mix flour, baking soda, baking powder, salt, nutmeg and cinnamon together in another bowl. Stir buttermilk mixture into flour mixture until combined then add butter and knead until a soft dough forms.
    3. Turn out dough onto a lightly floured work surface and roll to 6mm thick. Cut dough into doughnut shapes using a 6cm doughnut cutter.
    4. Glaze: Beat icing sugar, margarine and vanilla extract together in a bowl until smooth. Gradually add milk, stirring constantly, until desired glaze-consistency is reached.
    5. To Prepare: Working in batches, cook doughnuts in hot oil until golden brown, about 1 minute per side. Transfer cooked doughnuts to a paper towel lined plate to drain. Dip hot doughnuts into glaze to coat.

    Wow! So easy, I can't believe nobody has rated/reviewed this yet! Quick and delicious. No waiting as for yeast doughnuts and not near as heavy as a traditional cake doughnut. Will certainly be making again. The family loved them dusted with powdered sugar right out of the fryer and it "melted" and glazed all over them.     Made half of the recipe and decreased the flour to 2 cups. Used my doughnut maker and baked for 6 minutes. Came out perfect. Makes 10/12 doughnuts this way.  -  25 Feb 2015  (Review from Allrecipes USA and Canada)
