    This is a simple, nutritious and delicious meal. Chicken is stir fried with capsicum, black beans and salsa. Serve topped with grated Cheddar cheese.

    Serves: 4 

    • 1 teaspoon olive oil
    • 1 green capsicum, diced
    • 1 red capsicum, diced
    • 2 tablespoons plain flour or as needed
    • 1 (30g) packet taco seasoning mix
    • 450g skinless, boneless chicken breast fillets, cut into bite size pieces
    • 2 teaspoons olive oil
    • 1 (400g) tin black beans, rinsed and drained
    • 125g prepared salsa
    • 120g grated Cheddar cheese

    1. Heat olive oil in a frying pan over medium-high heat until the oil is very hot. Stir fry the green and red capsicum until they start to become tender, about 5 minutes. Set the capsicum aside.
    2. Mix flour and taco seasoning in a bowl. Stir in chicken pieces, a few at a time and thoroughly coat with the flour mixture.
    3. Heat 2 teaspoons of olive oil in a large frying pan over medium-high heat and stir fry the chicken until no longer pink and the coating is browned, about 5 minutes.
    4. Stir in the capsicum, black beans and salsa. Let the mixture simmer for about 5 minutes to blend the flavours.
    5. To serve, sprinkle each portion with Cheddar cheese.
