Warming Mexican Beef Casserole

    This Mexican-style casserole is full of big, intense flavours. Serve with rice, some soured cream and extra chopped chillies, if you like it hot!

    Serves: 4 

    • 1 tablespoon oil, or as needed
    • 1kg beef, trimmed and diced
    • 1 large onion, diced
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 1/2 teaspoon chilli powder
    • 3 cloves garlic, diced
    • 1 teaspoon grated root ginger
    • 1 tin chopped tomatoes
    • 125ml stock or water
    • 1/2 lemon, juiced
    • 1 pinch salt and pepper, to taste

    1. Preheat the oven to 180 degrees C.
    2. In a large saucepan heat the oil and brown the beef. Then brown the onions.
    3. Transfer to a casserole. Add the spices to the pan and heat, stirring for 1 to 2 minutes.
    4. Add garlic, ginger, tomatoes, stock, lemon juice and seasoning. Pour the sauce over the meat and onions.
    5. Bake in the oven for 1 1/2 hours or until the meat is tender.

    We all enjoyed this but next time will make it more hot and add extra chilli, also be ware if you add a stock be careful on the amount of salt you add we thought a little salty so next time less salt.  -  09 May 2017  (Review from Allrecipes UK & Ireland)
