Quick and Easy Prawn Fajitas

    This is a twist on a classic fajita recipe using prawns instead of beef or chicken. Serve with refried beans and Spanish rice to make an easy midweek supper!

    Ingredients
    Serves: 6 

    • 1 1/2 tablespoons vegetable oil, divided
    • 1 green capsicum, sliced
    • 1 red capsicum, sliced
    • 450g medium prawns, peeled and deveined
    • 1 small onion, diced
    • 1 sachet taco or fajita seasoning
    • 3 tablespoons water, or as needed
    • 6 flour tortillas, warmed

    Directions

    1. Heat 1 tablespoon of oil in a large frying pan over medium-high heat. Add the red and green capsicum, and onion. Cook, stirring frequently until capsicum are hot, but still slightly crisp, about 5 minutes. Remove from the pan and set aside.
    2. Pour the remaining 1/2 tablespoon of oil into the pan, and add the prawns. Cook, stirring occasionally, until pink and opaque. Reduce heat to low, and return the capsicum and onion to the pan. Stir in taco or fajita seasoning and water so that everything is evenly coated. Simmer until capsicum are heated. Serve in warm tortillas.

    We really like these fajitas! The best part was with a couple of shortcuts, (bag of frozen peppers and onions, pre-cooked shrimp), this recipe only took me about 15 minutes to prepare! I had some leftover brown rice, so I added that for a little more substance. I tried a little with shredded colby-jack and some sour cream and they were even better!     This was really good and really easy, and that makes it a winner in my book. I mixed my raw shrimp with about 1/4 cup of cilantro and the juice of 1 lime and let it marinate while I cut and cooked the vegetables. Then prepared it exactly as directed.
