Mixed Bean Salad

    The perfect salad to serve with cold meats or fish on a hot day! It's even better the second day when the beans have had a chance to absorb the lemon juice.

    Serves: 6 

    • 1 tin borlotti beans
    • 1 tin cannellini beans
    • 1 tin chickpeas
    • 1 tin kidney beans
    • 1 tin sweetcorn
    • 2 spring onions, finely chopped
    • 2 tablespoons olive oil
    • 1 tablespoon lemon juice
    • 1 pinch salt
    • 1 pinch black pepper

    1. Drain and rinse all of the tinned beans and sweetcorn and place in a serving bowl.
    2. Add your spring onions, oil and lemon juice. Toss and season to taste.
