Mexican style spicy beef mince with tortilla chips, lettuce, avocado, tomatoes, cheese and sour cream. Yummy. Great for sharing as a platter or made as individual servings.

Samantha's Supper

Serves: 4 

  • 1 tablespoon vegetable oil
  • 2 onions, diced
  • 1 clove garlic, crushed
  • 2 chillies, de-seeded and minced
  • 500g lean steak mince
  • 1 tablespoon chilli powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • a few drops Tabasco sauce
  • 100ml chilli sauce
  • salt and pepper, to taste
  • 2 packets plain tortilla crisps
  • 4 tomatoes, diced
  • 1 avocado, peeled, stone removed and diced
  • grated cheese
  • iceberg lettuce, finely shredded
  • sour cream for serving
  • 1/2 jar taco sauce, or to taste

  1. Preheat the oven to 190 degrees C.
  2. Heat a large fry pan with oil and add the onions. Sweat down then add the garlic and chillies then cook for a minute. Add the mince and brown. Add the dried spices, Tabasco and chilli sauce. Cook for 5 to 10 minutes. Season with salt and pepper.
  3. Grab a large shallow oven dish or 4 dinner plates if serving individually. Place the tortilla chips on the bottom to cover or cover four plates. Top with the mince. Add the tomatoes and avocado dotted about evenly. Top generously with grated cheese.
  4. Bake until heated through, the cheese is melted and the crisps have taken on a little colour, about 10 minutes.
  5. Carefully remove from the oven and arrange the lettuce all around the outside of the plate. Dot generously with sour cream and taco sauce then serve.
