Messy Mexican Nachos

    This easy-peasy versatile dish was a hit with my family of 8 growing up, and now my husband can't get enough either! It may not look amazing when it's cooked, but the taste is a guaranteed delight.

    Serves: 4 

    • 1 onion, diced
    • 500g turkey, lamb or beef mince
    • 1 (30g) packet taco seasoning
    • 1 (430g) tin refried beans
    • 100g Cheddar cheese, grated
    • 100g mild or medium salsa (optional)
    • 100g sour cream (optional)
    • 1 small tomato, diced
    • 1 (200g) bag plain salted tortilla chips
    • 150g iceberg lettuce, sliced

    1. Brown the onion and mince in a large frypan over medium heat. When cooked thoroughly, add the taco seasoning in according to the directions.
    2. Stir in the refried beans, followed by the cheese, salsa, sour cream and tomato.
    3. Serve over a plate of tortilla chips and top with chopped lettuce. Enjoy eating these gourmet nachos with your fingers!


    If you do not have tortilla chips on hand, serve in warm burritos instead.
