Creamy Curried Sausages

Something I cook when the weather is cold and my 10yo daughter loves it so I wrote this for her to use to cook it.

  • about 10 beef sausages
  • 1 large onion diced
  • 2 teaspoons crushed garlic
  • 2 375ml cans Carnation evaporated milk
  • 6 teaspoons Keens curry powder
  • 2 cups frozen peas
  • 2 cups rice
  • 1 tablespoon cornflour
  • milk

  1. Cook sausages and cut into bite sized pieces, set aside.
  2. Fry onion and garlic until onion is softened.
  3. Return sausage pieces to pan with onions, add curry powder, cover and cook on low for 30 mins
  4. Add peas, cover and keep cooking for another 10 mins
  5. Add carnation milk.
  6. mix cornflour and a little milk together and add to meal, bring to boil to thicken, if not thick enough add more cornflour if too thick just add normal milk to thin.
  7. Cover and turn down low while cooking rice.
  8. Cook rice in boiling salted water, drain and serve topped with curry.

Its easy to vary the quantities to suit your self eg more or less curry, sausages etc.
