Gluten Free Potato Mushroom and Bacon Bake

    Had a tin of mushrooms in butter sauce begging to be used, and not quite payday, so jazzed up a standard potato bake using them, and some microwave time too! Tasted so wonderful, my hubby said I should put it on here as a thanks for all the lovely recipes I've used for our family over the past few years!

    Serves: 4 

    • 3 or 4 potatoes, thinly sliced
    • 1 tin mushrooms in butter sauce
    • 1/2 cup gluten free flour
    • 1 onion, thinly sliced
    • 5-6 rashers cooked and diced bacon
    • 1 to 1/2 cups grated cheese
    • pepper, to taste

    1. Preheat oven to 180 degrees C. Spray a large tray with rice bran oil.
    2. In the tray layer 1/2 the potato, 1/2 the tin mushrooms, 1/4 cup flour sprinkled, 1/2 onion, 1/2 bacon, 1/2 cup cheese, pepper for taste. Repeat to create a second set of layers.
    3. To finish the bake add layer of potato and cheese. Pour over milk.
    4. Microwave on high for 5-6 minutes until potatoes start to soften. Put in the oven for about an hour or until potatoes lose their raw crunch


    Could also add capsicum, red onion, and ham or cooked chicken instead of bacon
