A tangy, spicy as you like homemade BBQ sauce that (i think) is the bomb! It can be used as a condiment, base for something else or a marinade. It has taken me many attempts and research to get here and hopefully you enjoy it :-)
Heat the oil in a heavy based pan such as a skillet or cast iron pot, add the onion and garlic then fry until just softening.
Add the chilli paste which can be substituted with any kind of hot chilli from a jar (if you have a favourite use that). Add the ketchup, water, syrup and vinegar then stir over a medium heat
Add the pepper, mustard, salt, onion powder, mustard powder, Worcester sauce, lemon juice and cayenne pepper then bring to a simmer
At this point check the taste and heat, I add extra hot sauce here or if it's for the family I leave it out. Simmer the mix for 15-20 minutes. Blend it with a hand blender to get a smooth consistency reduce until the desired consistency is achieved
Allow to cool and enjoy, in sterilised jars this should last you a number of months. Once opened refrigerate. Use as a marinate, side dish and remember adjust the hotness to your taste.
