Get your potato and stab it directly through the centre with a skewer until it appears through the other end. Please be careful with this part as it can jab through quite quickly.
Grab a knife and start at one end slicing it in a circular motion going right through touching the skewer. In fact the knife should be touching the stick the entire time. Remember to slice at around a 30 degree angle until you get right through to the other end of the potato.
At this point you want to gently pull the potato slices apart to about 1/2 inch gaps. Grab some oil and with your fingers lightly cover all surfaces on show, including all the gaps. Sprinkle with some sea salt and BBQ seasoning, if liked.
Pop in a preheated 220 C / Gas 7 oven for around 50 to 60 minutes, or until really beautifully crispy.
