    Serve this yummy salad all year round. The taste of sweet potato is amazing, plus you tickle the taste buds with the chipotle aioli dressing.

    Ingredients
    Serves: 4 

    • 500g sweet potato
    • olive oil, as required
    • seasoned salt, to taste
    • 1kg chicken breast fillets
    • 2 chicken stock cubes
    • 150g mixed salad leaves
    • 1 (440g) tin corn kernels
    • 2 - 3 tablespoons chipotle aioli, or to taste

    Directions
    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Preheat oven to 200 degrees C. Line a baking tray with baking paper.
    2. Peel and cut sweet potatoes into chips. Place in a bowl then drizzle with olive oil and sprinkle with seasoned salt. Mix until well coated.
    3. Place chips on the oven tray and cook for approx. 20 minutes or until soft.
    4. Meanwhile, slice chicken breasts in half lengthwise and cut each one into strips.
    5. Spray a fry pan with cooking spray and saute chicken until colour changes. Do not drain.
    6. Sprinkle the chicken with some seasoned salt and crumbled stock cubes, then stir the stock cubes into the liquid in pan until dissolved. Saute on low heat until chicken is cooked through, stirring occasionally to coat with the stock (stock should be like gravy at this stage).
    7. To Serve: Mix the leaves, corn and chips together with the aioli. Plate the salad and place chicken pieces on top.
