Gluten Free Banana and Raspberry Bread

    Makes: 1 loaf

    • 1 1/2 cups ripe bananas mashed
    • 5 tablespoons honey
    • 6 tablespoons butter
    • 1 tablespoon vanilla
    • 4 eggs
    • 2 tablespoons brown sugar
    • 1 cup coconut flour
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 2 teaspoon cinnamon
    • 1 punnet raspberries

    1. Preheat the oven to 150 degrees C. Grease bread pan and line with baking paper.
    2. In a bowl mix banana, honey, butter, vanilla, eggs and brown sugar until combined.
    3. In a separate bowl mix coconut flour, baking soda, salt and cinnamon.
    4. Combine wet and dry ingredients, then gently mix in raspberries.
    5. Spoon batter into the prepared bread pan. Bake for 60-70 minutes or until the loaf is golden brown.
    6. Remove from oven and allow to cool for a few minutes before transferring to a wire rack.
    7. Delicious served with butter or mascarpone.
