I created this recipe after trying the mother nature oaty slices, I found they were delicious but the ingredients list was long and full of preservatives and nasties. This oaty slice recipe is extremely easy and has all natural and healthy ingredients.
1 cup nuts (almonds and cashews or any combination you prefer)
15 or so pitted dates
1/4 - 1/2 cup apricots
1/4 - 1/2 cup dark chocolate (I use 70% or more cocoa)
1/2 cup shredded coconut
1 teaspoon cinnamon

Preheat the oven to 150 degrees C.
Grind the oats and nuts in a food processor until they reach your desired consistency, chunky or fine (or a mixture of both). Spread on a tray over baking paper and toast for 10-15 minutes until light brown. Once down allow to cool right down and turn up the oven to 180 degrees C.
While the oats and nuts are cooking line a slice tin or pan with baking paper. Blend or process the dates with a bit of water in a water-resistant food processor, blender or nutri-bullet until it reaches a nice and smooth paste.
In a large mixing bowl put in the cooled oats and nuts, chopped apricots, chocolate, shredded coconut and cinnamon then combine. Mix in the date paste. If too dry add some coconut oil, if too wet add some more blended oats.
Put mixture into pan and cook for 5-10 minutes, allow to cool before putting it in the fridge for at least an hour.
This version is the apricot and chocolate oaty slices however you can sub out those ingredients for others:
- Cocoa for afghan slices
- Lemon zest and juice for lemon meringue slices
- Chocolate chips for chocolate chip slices
- Orange zest and juice, and chopped dark chocolate for orange chocolate slices
- Sultanas and honey (with less liquids) for sultana and manuka honey slices
There's also several other combinations you can do.
