Frittata is an egg-based Italian dish similar to an omelette or crustless quiche, enriched with additional ingredients such as meats, cheeses, vegetables or pasta
Heat butter in a frypan, cook bacon until its almost done, then add the sliced mushroom and cook until its done. Add grated carrot, spinach, garlic and pepper, then mix well and put aside until needed.
Grease a 12 hole muffin tin (or use paper cups), then add a spoonful or the prepared vegetables.
Mix the cheeses together, then place on top of the vegetables. Pour the egg mixture almost 3/4 full in each muffin hole.
Then bake in a 200 degree C preheated oven for 15-20 minutes or until done.
I added a handful of baby spinach and a couple of chopped shallot leaves, and 2 tablespoons of almond flour for extra vitamins.
Hubby came home from work and scoffed 3 of them!
