- 5 eggs
- 1 cup self raising flour
- 375g zucchini, grated
- 1 large onion, finely diced
- 5 rashes of rindless bacon, diced
- 1 teaspoon chopped garlic
- 1 teaspoon of mixed herbs (can be fresh or dried)
- 1 cup grated cheddar cheese
- 1/4 cup olive oil
- 1 large carrot, grated

- Preheat oven to 180 degrees C. Grease and line a 30 x 20cm lamington pan.
- Lightly beat the eggs in a large bowl. Add the flour and beat until smooth, then add the rest of the ingredients and mix well.
- Pour into the prepared pan and bake in oven for 30-40 minutes or until cooked through.
Tip
Extended cooking time may be needed - test with a skewer in the middle of the slice to make sure it is cooked.
