Easy Zucchini and Bacon Slice

    This is a delicious family favourite. Good way to hide the greens from fussy kids. It is also delicious as a lunch treat hot or cold.

    Serves: 4 

    • 5 eggs
    • 1 cup self raising flour
    • 375g zucchini, grated
    • 1 large onion, finely diced
    • 5 rashes of rindless bacon, diced
    • 1 teaspoon chopped garlic
    • 1 teaspoon of mixed herbs (can be fresh or dried)
    • 1 cup grated cheddar cheese
    • 1/4 cup olive oil
    • 1 large carrot, grated

    1. Preheat oven to 180 degrees C. Grease and line a 30 x 20cm lamington pan.
    2. Lightly beat the eggs in a large bowl. Add the flour and beat until smooth, then add the rest of the ingredients and mix well.
    3. Pour into the prepared pan and bake in oven for 30-40 minutes or until cooked through.


    Extended cooking time may be needed - test with a skewer in the middle of the slice to make sure it is cooked.
