Quick Apricot Chicken

    This easy meal is fantastic for any busy family. The slow cooker does all the work. Once served, pour some of the juice over the chicken. This dish is best served with rice.

    Serves: 4 

    • 1kg chicken thighs (without bone)
    • plain flour
    • 1 packet French onion soup
    • 1 (400ml) tin apricot nectar
    • small tin apricots in nectar finely chopped (optional)

    Preparation:10min  ›  Cook:8hours  ›  Ready in:8hours10min 

    1. Lightly coat chicken thighs in flour and place in slow cooker.
    2. Mix the French onion soup and tin of apricot nectar in a bowl and pour over the chicken.
    3. Leave in slow cooker on low for 8 hours or high for 4 hours.
    4. 10 minutes before the chicken is done, add the chopped apricots (optional).
    5. If the sauce of the apricot chicken is to watery then add some cornflour with a little water and stir in gently or if the liquid is too thick, add a little bit of water.
