Corn Bread - Aussie Style

    Makes: 1 bread

    • 1/2 cup butter, melted
    • 2/3 cup white sugar
    • 2 eggs
    • 3 tablespoons honey
    • 1 cup plain flour
    • 1 cup cornmeal, sifted
    • 1/2 teaspoon bicarb soda (baking soda)
    • 1/2 teaspoon salt
    • 1 cup buttermilk (can be whole or lite)

    1. Preheat oven to 180 degrees C. Line a square baking tin with baking paper and brush the sides and bottom with butter.
    2. Place the melted butter in a large bowl and stir in sugar.
    3. Add eggs and honey. Mix well. Add the plain flour, sifted cornmeal, bicarb and salt then buttermilk.
    4. While stirring, make sure there are no lumps (but don't over stir as the end result may not turn out fluffy).
    5. Pour into the tin and place on the middle rack of the oven.
    6. Check at 25 minutes with a skewer (like you would with a cake) to make sure that it is cooked inside. If it is not cooked on the inside then cook for a little longer but check every 5 minutes.
    7. Once cooked, let the cornbread rest in the tin for about 10 minutes before transferring to a wire rack or cutting board.
    8. The cornbread has to be served warm so once transferred to the wire rack or cutting board, cut and enjoy.

    I used gluten free all purpose flour instead of wheat but everything was nicely compact anyway. A bit sweet, but still a nice flavour.  -  04 Dec 2015

    Fantastic recipe. For my first attempt everything went good. A bit crumbley but still goes down the same way. Definitely making this again.  -  18 Oct 2015
