Soft BBQ Prawn Tacos

    This is a beautifully flavoursome way to serve prawns - in warm white corn tortillas and spiced with BBQ sauce, coriander, onion and lime.

    Serves: 4 

    • BBQ Sauce
    • 1/2 cup BBQ sauce
    • 4 tablespoons chopped fresh coriander
    • 2 teaspoons fresh lime juice
    • Slaw
    • 1/4 red cabbage
    • 1 lime, halved
    • 2 teaspoons fresh lime juice
    • Tacos
    • 1 tablespoon extra-virgin olive oil
    • 1 teaspoon Mexican chilli powder
    • 1 teaspoon salt
    • 450g medium prawns, approx 20, deveined and tails removed
    • 8 corn tortillas

    1. BBQ Sauce: Combine the BBQ sauce, coriander and lime juice into a bowl until blended. Cover and refrigerate until needed.
    2. Slaw: Coarsely slice the cabbage then add the salt and lime juice from both halves. Toss and set aside to marinate.
    3. Tacos: Combine olive oil, Mexican chilli powder and salt into a large bowl. Add prawns and toss to coat.
    4. Arrange prawns on a medium-heat pan, making sure they are not touching each other. Cook prawns for 1 1/2 to 2 minutes on each side or until translucent in colour
    5. To Serve: Fill the tortilla with cooked prawns, slaw and drizzle with chipotle sauce.
