Baked Banana .....In A Cupcake

    Chunky banana wrapped in a moist, cinnamon flavoured cake. It is serve hot, with caramel cream.

    Serves: 14 

    • Cupcakes
    • 2 cups self raising flour
    • 1 cup brown sugar, packed
    • 1 teaspoon cinnamon
    • 1/2 teaspoon salt
    • 2 eggs
    • 1 teaspoon vanilla
    • 3/4 cups milk
    • 1/3 cup oil
    • 4 large bananas
    • Caramel Cream
    • 300ml thickened cream
    • 1 tin caramel top and fill, caramel cream

    1. Cupcakes: Preheat oven to 180 degrees C. Line a 12 hole muffin tin with large paper patty pans.
    2. Place all ingredients except bananas into a medium bowl and using an electric mixer, beat until well combined.
    3. Cut each banana into 4 pieces. each piece should fit width-ways across the patty pan.
    4. Place about 1 tablespoon of mix into each patty pan and place a piece of banana (width-ways) on top of mix. Cover with another tablespoon of mix.
    5. Cook for 20 to 25 minutes or until a skewer comes out clean. Serve hot with caramel cream.
    6. Caramel Cream: Using an electric mixer, beat the cream and caramel until well combined and starting to thicken. Don't over beat or it will separate.
    7. Spoon over the banana cupcake to serve.
