Spaghetti with Broccoli, Basil and Parmesan Sauce

    When I first made this recipe it was so easy. I made it for my family and it had this nice crunch from the broccoli and a texture I haven't really tasted before. It was light and fresh. I think it would go nicely with some garlic bread or chickpeas added to give that creaminess and extra protein.

    Serves: 4 

    • 500g spaghetti
    • 1 head broccoli, chopped into florets
    • large handful fresh basil leaves
    • 250ml cream
    • 50g Parmesan cheese, grated

    Preparation:10min  ›  Cook:10min  ›  Ready in:20min 

    1. Bring the spaghetti to a boil and cook until done.
    2. Put broccoli into a saucepan of cold water and boil for 5 minutes or until just cooked. Drain well and place into a food processor.
    3. Add in the basil, cream and Parmesan to the food processor then blend to a sauce. Season with salt and pepper.
    4. Drain the pasta and keep in that same saucepan. Pour the broccoli sauce over the hot pasta and toss well.
    5. Serve in bowls garnished with extra basil leaves and parmesan.
