Chocolate and Marshmallow Slice

    This recipe has a chocolate and marshmallow base similar to a brownie, then served with a marshmallow fluff topping.

    Serves: 8 

    • 185g butter, chopped
    • 300g dark chocolate (or milk chocolate if you prefer) chopped
    • 1/4 cup cocoa powder
    • 1 cup brown sugar
    • 3/4 cup caster sugar
    • 2 teaspoons vanilla extract
    • 4 eggs, beaten
    • 1 1/2 cups plain flour
    • 200g mini multi-coloured marshmallows
    • 200g marshmallow fluff, or similar

    Preparation:15min  ›  Cook:40min  ›  Ready in:55min 

    1. Preheat oven to 170 degrees C. Grease a brownie tray and line with baking paper.
    2. Stir butter and chocolate in a saucepan over low heat until smooth and melted.
    3. Remove from heat and whisk in cocoa, sugars, and vanilla extract. Cool until barely warm.
    4. Stir egg, flour and marshmallows into mixture. Spread into the prepared brownie pan.
    5. Bake for around 40 minutes. Test with a skewer. Cool in the the tray then cut into bite sized pieces. Add a generous dollop of marshmallow fluff to each slice.
