Peppered Potato Bake

I used this recipe as a side dish when I worked in a steakhouse in the seventies. I have recently brought it back to life. It works well with all kinds of grills and is simple quick and easy.

Serves: 2 

  • 1 large brown onion, sliced
  • 2 large potoes, peeled and roughly chopped
  • 1 tin Carnation milk
  • 2-3 teaspoons ground hot paprika
  • ground black peppercorns

Preparation:15min  ›  Cook:1hour  ›  Ready in:1hour15min 

  1. Layer the base of a baking dish with onions then sprinkle liberally with paprika.
  2. Toss in potatoes and spread. Pour in Carnation milk.
  3. Grind black pepper over potatoes to your taste.
  4. Cover with foil and place in a hot oven for an hour or so.
