Lemon Cream Cheese Dessert Bread

    Creamy lemon filling makes this bread divine. Cut into squares and serve warm with a cup of tea or coffee.

    Makes: 1 loaf

    • Dough
    • 2 3/4 cups plain flour
    • 2 1/4 teaspoons dry yeast
    • 1 teaspoon salt
    • 1/4 cup sugar
    • 2 tablespoons butter
    • 1/2 cup water
    • 1/2 cup milk
    • 1 egg, beaten
    • Filling
    • 500g cream cheese, softened
    • 1/2 cup sugar
    • 2 lemons, zested
    • Topping
    • 1 tablespoon cinnamon
    • 6 tablespoons sugar
    • 2 tablespoons butter, melted

    1. Dough: In a large bowl combine the flour, yeast and salt.
    2. In a saucepan on the stove or in a microwave safe bowl in the microwave, combine the sugar, butter, water and milk. Heat until the mix is hot (not boiling) and the butter is almost melted.
    3. Gradually add the milk mixture to the flour mixture. Add the egg and mix to a soft dough.
    4. On a floured board, knead by hand for 5 minutes. Place the dough into a clean greased bowl, cover with plastic wrap and place in a warm spot for 45 minutes.
    5. Punch dough down and rest for 5 minutes.
    6. Preheat the oven to 180 degrees C. Grease a lamington tray (approximately 30 x 25 cm)
    7. Filling: With an electric mixer, beat the cream cheese, sugar and lemon zest together until smooth. Put aside.
    8. Cut the dough in half and roll 1 piece out to fit bottom and sides of the prepared tray. Place in the tray and spread evenly, to the edges with cheese filling.
    9. Roll out other piece of dough and cover over the filling, making sure to meet the edges of bottom piece of dough.
    10. Topping: Mix the cinnamon and sugar together.
    11. Brush the melted butter over the dough top and sprinkle with the cinnamon sugar.
    12. Cook for approx 20 minutes or until nicely brown and a bit crunchy on top.
