I decided to make these tea and raisin cupcakes when a couple friends came over for tea one day and they absolutely loved them! Hope you enjoy them too!!
Preheat oven to 180 degrees C. Line a 12 hole muffin tin with paper cases and put to one side.
In a bowl, sift together the flour, baking powder and mixed spice then add the margarine, castor sugar, eggs and vanilla paste then beat together until its smooth.
Stir in the tea and raisins then mix until all the ingredients are combined.
Spoon the mixture evenly into the paper cases and place in oven for 20-25 minutes or until golden brown and firm to the touch.
Place the cupcakes onto a wire rack and leave to cool.
Mix some icing sugar with mixed spice in a small bowl then dust the cupcakes with it.
