Delicious chocolate slices made with biscuits and coconut. These ones are made with chocolate cream bikkies but you could also use plain biscuits.

Chocolate

Ingredients
Serves: 8 

  • 100g dark chocolate, chopped
  • 80g unsalted butter
  • 1 tablespoon golden syrup
  • 250g chocolate cream biscuits, crushed
  • 1/2 cup (45g) desiccated coconut
  • 1 cup (125g) pecans roughly chopped
  • 1 tablespoon cocoa powder, sifted
  • 1 egg, lightly whisked
  • Icing
  • 100g dark chocolate
  • 40g unsalted butter

Directions

  1. Line base and sides of a shallow 30x20cm rectangular tin with foil.
  2. Combine chocolate, butter and syrup in small heavy based saucepan. Stir over low heat until chocolate and butter have melted and mixture is smooth. Remove from heat and let cool a little.
  3. Combine biscuit crumbs, coconut, pecans and cocoa in medium mixing bowl. Make a well in the centre.
  4. Pour the combined chocolate mixture and egg onto dry ingredients. Using a wooden spoon, stir until well combined.
  5. Press mixture evenly into prepared tin. Refrigerate 30 minutes or until set.
  6. Icing: Put chocolate and butter in small heatproof bowl. Stand over pan of simmering water. Stir until chocolate and butter have melted and mixture is smooth. Cool slightly.
  7. Spread mixture evenly over slice base. Refrigerate until set.
  8. Remove slice from tin. Cut into small squares with sharp knife.

i used milk arrowroots, as that was what I had in the cupboard. I also didn't have enough dark choc so used milk choc in the base and also added some sultanas. I wanted the topping to be quite soft so it wouldn't crack when I cut it so I added extra butter. I think I used 150g choc and almost 100g marg. I found that it served many more than 8. It was so deliciously rich that I cut it into bite sized pieces. I have since had two requests to bring it to other functions. - 14 Oct 2011

This was great.. I substituted sultanas for the nuts & used plain biscuits, added 150grms of chocolate and 60 grms of butter for topping.. Did all heating/melting in microwave.. Just like the bakers ones.. Thanx - 31 Aug 2010
