German Gingerbread Cookies

My favourite ginger bread cookie recipe :)). Found it in Nürnberg, while I visited my gran in Germany. Simple, and so yummy, my brothers gobbled them up in a day!! :)


Makes: 40 cookies

  • 6 eggs
  • 180g brown sugar
  • 2 tablespoons honey
  • 1 teaspoon to 1 tablespoon rum
  • 2 teaspoons ground cinnamon
  • 1 pint salt
  • 250g ground almonds
  • 250g ground haselnuts
  • 200g glacé orange peel
  • 200g glacé lemon peel
  • wafers (70mm or 90mm)
  • 200g couverture or icing sugar

Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

  1. Preheat the oven to 150 degrees C. Line a baking tray with baking paper.
  2. Beat eggs, sugar, honey and rum until frothy. Stir in remaining ingredients except the wafers and icing sugar.
  3. Spread the dough on the wafers. Lay on the prepared baking trays then bake in the preheated oven for 20 minutes.
  4. When cooled, cover with couverture or icing sugar .

Couverture chocolate is a high quality chocolate that contains a higher percentage of cocoa butter (32–39%) than baking or eating chocolate.
