Preheat the oven to 180 degrees C. Line a 12-hole muffin tin with paper cases.
Into a mixing bowl, sift in the flour and stir in pineapple pieces, cheese and ham. Add pineapple juice, butter and eggs then stir well. Divide mixture between 12 muffin cases. Sprinkle a little grated cheese on each muffin.
Bake in the preheated oven for 25 to 30 minutes until risen, golden brown and a skewer inserted into the centre comes out clean. Remove from the oven and serve warm or allow to cool before enjoying.
These freeze extremely well and are delicious warmed up from the freezer on medium in the microwave for a couple of minutes.
