Ham and Pineapple Muffins

    A delicious savoury snack, perfect for lunch boxes or after school treats and easy enough to get your kids to make them for themselves!

    Makes: 12 muffins

    • 250g self raising flour
    • 225g pineapple, chopped finely
    • 100g Cheddar cheese, grated (plus extra for topping)
    • 100g ham, chopped into small squares
    • 75ml pineapple juice
    • 100g butter, melted
    • 3 eggs

    1. Preheat the oven to 180 degrees C. Line a 12-hole muffin tin with paper cases.
    2. Into a mixing bowl, sift in the flour and stir in pineapple pieces, cheese and ham. Add pineapple juice, butter and eggs then stir well. Divide mixture between 12 muffin cases. Sprinkle a little grated cheese on each muffin.
    3. Bake in the preheated oven for 25 to 30 minutes until risen, golden brown and a skewer inserted into the centre comes out clean. Remove from the oven and serve warm or allow to cool before enjoying.


    These freeze extremely well and are delicious warmed up from the freezer on medium in the microwave for a couple of minutes.
