Combine all of the ingredients in a mixing bowl and toss well to coat the potatoes thoroughly. Transfer to a roasting tin.
Roast in the preheated oven until golden brown and tender, about 30 to 40 minutes depending on the size of potato quarters (roast for 20 to 25 minutes if parboiling first, see tip). Remove from the oven and serve.
If you have a choice, the Desiree and King Edward potato varieties are superior for roasting.
It is advisable to parboil the potatoes prior to roasting them as this yeilds a fluffier interior and crispy exterior. Parboil the potato quarters in boiling water until just tender, about 8 to 10 minutes before draining, tossing in oil and herbs and popping in the hot oven.
