Christmas Brussels Salad

    A bag of salad or a head of lettuce are ideal for creating meals from leftovers. Combine with Brussels sprouts and festive cranberry sauce to make this wonderful salad.

    Serves: 4 

    • 1 tablespoon olive oil
    • 500g cooked Brussels sprouts, sliced
    • 50g walnut pieces
    • 1 red apple, cored and sliced
    • 1 lemon, juiced
    • 2 tablespoons cranberry sauce
    • 1 tablespoon extra virgin olive oil
    • 4 handfuls watercress, spinach and rocket salad

    1. Heat the oil in a frying pan over a medium heat and fry the sprouts and walnuts for 1 to 2 minutes. Remove from the heat and toss in the apples.
    2. Whisk the lemon juice with the cranberry sauce and oil then toss into the salad with the sprout mixture. Serve.
