Carrot and Turnip Soup

    A nice combination of root vegetables. This warming soup can be served with some crusty bread for a complete light meal.

    Serves: 4 

    • vegatable oil, as needed for cooking
    • 450g carrots, grated
    • 450g turnips, grated
    • sea salt, to taste
    • ground black pepper, to taste
    • 2 litres boiling water
    • 2 vegetable stock cubes

    1. In a large saucepan over a medium heat warm a little oil then add the grated carrot and turnip. Season and cook while stirring for several minutes.
    2. Add the water and stock cubes then bring to the boil. Reduce the heat and simmer gently for 15 to 20 minutes.
    3. Blend using a handheld liquidiser until smooth. Return to the heat and bring again to the boil. Once boiling remove from the heat and serve in warmed bowls.
